Crunchy and sweet, oh so fun to eat; funnel cakes! Just a simple dough to stir up and drizzle into hot oil finished up with a dust of powdered sugar- it's fun on a plate.
FUNNEL CAKES
1 1/2 cups flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 egg
3/4 cup milk
a funnel with a 5/8 inch opening
Heat a pot of oil for deep frying while you stir your ingredients together. Place your finger over the bottom of the funnel (to close if off) while you fill it half full with batter. Swirl it into the oil (through the funnel) in full circles. When brown, remover from oil and dust with powdered sugar. Pinch off pieces and enjoy!
My parents made funnel cakes on occasion; often during the chilly holiday season. As a girl I recall having them late at night- and hating sharing them with everyone; they're just too good!
