Homestead Staple: Simply Granola


   Crunchy, sweet; grains... chewy dry fruits...it has to be granola, the homestead staple. This versatile, yet hearty mix is very easy to make- and so simply to create. Let's look at the Simply Scaife flexi-recipe:

Simply Granola Flexi-recipe Formula

For every 4 cups of oats add:
1/3 cup sweetener
1/3 cup oil
1 tsp vanilla (or cinnamon)
2 cups add ins

   Work this together well; every piece nicely coated and "damp". From here, two options.
1. Spread the mix onto lightly oiled sheets and toast in the oven 300 degrees for 30 minutes, tossing occasionally...or...
2. Spread mix onto dehydrator racks and dehydrate 6 hours.
   Store in airtight containers. If the granola becomes "moist" or somewhat "stale" just re-toast or re-dehydrate it.


   Some personal notes:
*We like old fashion, rolled oats
*Honey is our sweetener of choice
*I prefer the dehydrator to the oven
*We love variety!

   Some favorite add-in combinations:
*almonds with dried apple and cranberry
*use a honey/peanut butter mix (equal parts) for the sweetener
*raisins with peanuts
*pumpkin seeds, flax and cranberries
* stirring in dark chocolate chunks with any of the combinations

   The process is simple and the possibilities are endless! It's great on yogurt or fruit, in milk as a cereal, or pressed together with some honey and peanut butter for a bar. Our homestead staple: granola!
