Farmhouse Foods: "Christian Cookies"




   My kids starting cooking alongside me as soon as they could hold a spoon. With their love of cooking growing right alongside their independence, recipes were needed that were simple, short and effective. In all honesty, I can't tell you here this recipe came from or how it came to me; but we are so glad it did. Every one of my children used this recipe early in life as a first 'did it myself' cooking task,. and each one has their own attachment to it today.





  
   One of my kids called them "Christian cookies" because of the little crosses made in the top; another said they were her "Famous cookies" because it was her favorite recipe to use; the other just called them 'good' because eating was better than making.
   No matter their name, this simple cookie recipe has been made and shared with every child that has ever entered our lives. Our foster boys learned to make them, children we babysat, cousins who spent a day with us- all gathered round the table and dug their hands in the sticky dough making memories and tasty treats.


"Christian Cookies"

1 cup peanut butter
1 cup sugar
1 egg
extra sugar for rolling

It's simple. Stir them up. Roll a standard spoonful of dough into a ball; roll the ball in sugar. Place it on a well oiled baking sheet and use a fork to make criss-cross intentions in the top of each cookie. Bake at 350 for seven minutes. Cook on a rack and enjoy! These cookies store nicely in an airtight container and freeze well, too. Yield 1 doz.

   There you have it; every babysitter's friend; every mom's secret fun. It may seem like just a peanut butter cookie, but, let me tell you...it's so much more!

I just made these and they came out gooey. There was supposed to be no flour in them?

No flour at all.
Dependent on the size of the cookie- maybe cook a bit longer? Sometimes if the humidity is higher, my baking is a bit off. Could try baking 10 minutes. Sorry, hope this helps.
