Simple Sweets!






   Once again the kitchen is filled with busy work as the holiday baking season starts. The farm boy was on hand for assistance: crushing mints and scooping chocolates; his sisters sampled as the drifted in after work. First on the list- the simple sweets: Peppermint Bites and Peanut Candies.

 
PEPPERMINT BITES

2 lbs white melting chocolates
1 lb peppermint candies, crushed

Melt the chocolates in a double boiler.
Stir in the crushed candies.
Drop by tablespoonfuls onto wax paper.




PEANUT CANDIES

2 lbs. melting chocolates
34 oz dry roasted peanuts

Melt the chocolates in a double broiler.
Stir in peanuts.
Drop by tablespoons onto wax paper.

   In years past we all gathered into the kitchen to take a turn stirring the melting chocolates, unwrapping and smashing mints, dropping the candies by the spoonfuls--such wonderful fun! Joy shined on their faces as they proudly shared their handmade treats! Today the kitchen is quieter; this week is finals at the college- yet how sweet is was to see the excitement on their faces as they trickled in the kitchen...snitching bites here and there. After all, no one ever out grows the joy of licking the spoon, do they?

The candy looks so good! I have been making chocolate covered peanut butter balls. It is my family tradition. They all expect it for Christmas.

On you question about the donkey being aggressive with the goats.. Normally Jack doesn't bother the goats, but he has chased them at times. After we sold Betsy the cow, I looked out the kitchen window and saw Jack trying to pick up Granny goat by the neck. I ran out and scolded Jack and he left Granny goat alone then. But, we briefly had a donkey that was very aggressive with the goats. He didn't stay here long.
My husband said it is very common for donkeys to be aggressive with other animals, though.
