Taste of Fall: Apple Salad

   Some days in fall are not the slow chilly days we all romanticize about. Some times they are exceptionally warm, like today..and filled with the busyness of planting seedlings and trekking miles on the sewing machine. Days like these demand a simple meal without the aid of and oven...a perfect day for Autumn's Apple Salad.

Autumn's Apple Salad

Dressing:
3 tablespoons honey
3 tablespoons yogurt
2 tablespoons apple cider vinegar
1/3 cup oil
dash of salt and pepper

Place all ingredients in a small canning jar. Shake to combine. Chill.

Salad:
mixed greens
chopped red apple
chopped green apple
handful dried cranberries
handful slivered almonds

Toss salad components in large bowl. Drizzle with dressing (to taste) and toss well.

   I love this salad with almost any thing: a piece of roast chicken, a few boiled eggs, or with some cold leftovers from the night before. To vary things a bit, grapes or nectarines may be added; spinach or romaine lettuce can form the base; any nut or seed blends in well. Crisp and sweet with just the right hint of tang...today was just right for this wonderful salad- served with leftover chicken from the night before, of course!
