In the Kitchen with Farm Boy



    When the farm boy is in the kitchen you never know what he might be found doing. Recently I found him doing splits on a chair- just to see if he could. When his friends see this picture it causes quite a stir!


Then there is always kickboxing- he loves to stir up a striking match with anyone who gets caught standing still in his presence. Generally, I usher him outside and remind him to 'save it for the mats."


Now the best thing to find him doing in the kitchen is cooking..and boy can he cook! This week he made a new twist on his favorite tasty treat. Instead of his standard egg crepes, he decided to change it up a bit and make chocolate crepes. 
Low in sugar and full of taste, farm boy's chocolate crepes are a must try...especially if you're up to making the creamy berry filling..then drizzling melted chocolate on top..and then...oh, good grief, here's the recipe!





Delicious Chocolate Crepes

2 Tablespoons melted butter
2 cups milk
1 teaspoon vanilla
2 large eggs
6 Tablespoons confectioner's sugar
1/2 cup cocoa powder
1 1/2 cups unbleached flour


Our young chef places all the ingredients in a blender a gives it a few whirls; just enough to get the lumps out and give a smooth result. Now he lets the mix sit for 20 minutes.....just leave it on the counter for a bit. He uses this time to set up a cake rack for cooling his crepes, preheating his iron griddle, and cutting wax paper squares to place between his cooled crepes.
Using an iron griddle, lightly buttered and heated on a medium flame, farm boy ladles the crepe mixture with 1/4 cup ladle..giving the skillet a good swirl to unsure a nice thin crepe. Once the crepe looks 'set' (sometimes you notice tiny bubbles on the surface) he gently flips the crepe...he can do it without a single torn crepe (my record is less impressive). After only a few seconds on this other side, he moves the crepe to a cake rack to cool, and continues the process.
Once the crepes are cool, farm boy places them in an airtight container with wax paper between each crepe to prevent sticking.

Creamy Berry Filling

1 lb cream cheese
1/2 cup sour cream
1/2 cup confectioners sugar
2 cups berries (he used lightly frozen raspberries)

Farm boy placed all the ingredients in a mixing bowl and mixed with a hand mixer until creamy and smooth. In an air tight container, this is chilled until ready to use. He likes a little dollop of whipped cream on top and a drizzle of melted chocolate. If that's not available, a nice dust of confectioners sugar is just as tasty.


Chocolate, berries, sweet whipped cream...what's not to love? My hips! This boy is dangerous for a diet...guess I'll need a few more conditioning rounds at the gym this week...I say as I smile at you with chocolate sauce on my lip.
